Abstract

This article examines the consumer properties of food products in Uzbekistan as a key
factor shaping the national food model and the economic development of the industry. Based on data from
Euromonitor International, official decrees of the President of the Republic of Uzbekistan, and materials from
international organizations (FAO/WHO), the main characteristics of the food market are analyzed: traditional
taste preferences, growing demand for value-added products, digitalization processes, and standardization.
Special attention is paid to the transformation of approaches to food safety in the context of harmonization with
international norms and the country›s accession to the WTO
